I love salsa! I also love using fresh salsa in some of my recipes like my taco soup recipe. What makes my salsa so great is it’s really fresh, quick and easy to make. I mean, I don’t usually toot my own horn here but my picky teenaged daughter even loves it. So much so I had to buy more chips!
6 to 8 tomatoes
1 green bell pepper
1 white onion
2 tablespoons minced garlic
1 or 2 jalapenos
1 small can tomato paste
1 to 2 tablespoons olive oil
1 teaspoon salt or to taste
1 teaspoon pepper or to taste
2 teaspoons fresh cilantro or dried cilantro to taste
2 teaspoons curled parsley or dried parsley to taste
2 teaspoons garlic powder or to taste
The first thing to do is chop up the vegetables and throw in a blender. I like to puree it but you can use whatever blender setting you want. If you are using fresh herbs, then go ahead and chop them up.
Once the veggies are blended, put in minced garlic, tomato paste, seasonings and blend again. Check the consistency, then add the olive oil. Only add enough olive oil to the consistency of your liking.
You can eat the salsa on it’s own with chips or use it any of your recipes of your liking.
