Growing up, I like many kids had to go to daycare. One of my favorite lunches from my daycare years was cowboy stew. It was not only my favorite food but many of my friends and family.
Whenever my friends knew I was making Cowboy Stew, they would be right over and there would be no leftovers. Even my daughter will ask when is the next time I am making Cowboy Stew.
It is a very easy, cheap and quick recipe that all kids love. I have found it is a great dish to serve to picky eaters. You know the ones that don’t like the idea of eating vegetables. This is also great as leftovers!
1 can of Campbell’s Beef Vegetable Soup
1 can of Campbell’s Beef with Vegetables and Barley
1 can of Campbell’s Old Fashioned Vegetable
1 cup of cooked rice
1lb hamburger meat
The first thing I like to do is get the water boiling for the rice. That’s 2 cups of water for 1 cup of rice. While that’s going, I start cooking the hamburger meat until browned.
Once the water is boiling, then you add the rice, put it on simmer, cover pot and let it cook until all the water is absorbed.
When the hamburger meat and rice is cooked, then you put them together. Next, add all three cans of soup to the mixture. Mix together and let it simmer for five minutes, then it’s done.
